  1. 6 tbsp butter
  2. 1/4 cup parmesan cheese
  3. 4 sweet potatoes, cooked and peeled
  4. 1/4 cup all purpose flour
  5. 1 cup orange juice
  6. 1 orange zest
  7. 1/4 cup granulated sugar
  8. 1/4 cup brown sugar
  9. 1/4 tbsp cinnamon
  10. 2 egg yolks
  11. 5 egg whites
  12. Salt to taste
  13. 1/2 tbsp sugar
  14. 1 Cup whole pecans
  15. 1 Cup maple syrup

* Step by Step Directions

  1. Take your baking dish and thoroughly grease it with butter.
  2. Spread the shredded parmesan cheese on the sides of the baking dish.
  3. Keep the baking dish in the fridge to let it settle.
  4. In a bowl, take the mashed sweet potatoes, butter, orange juice and zest, brown sugar, cinnamon, salt and 2 egg yolks. Mix all the ingredients well and keep it aside.
  5. Now preheat the oven to 220 Degrees Celsius or 425 Degrees F.
  6. In another bowl, beat the egg whites, then add granulated sugar to it and beat it again.
  7. Gently pour 1/4 of the egg white mixture into the potato mixture and remaining after a while. Spoon the mixture into the prepared dishes from the fridge. Tap a little on the corners of the mixture to settle.
  8. Put the dish into the oven and bake for one minute. Then reduce the temperature to 375 Degrees F and bake it for 1 hr till the colour turns to golden brown.
  9. While the dish is in the oven, heat the maple syrup in a small pan for 20 minutes and add pecan nuts to it.
  10. Take the dish out of the oven and pour the syrup and nuts over the souffle.
  11. Serve hot and enjoy the dessert.

  1. Beat the egg whites until the soft peaks form. Do Not overbeat them.
  2. While spooning the mixture into the dish be careful to not to touch the sides.
  3. Bake the dish until the souffle puffs and changes its colour to delicious golden brown.
  4. Heat the maple syrup on a low flame so to give some time for pecan nuts to absorb the sweetness of the syrup.
