* Dough

  1. 1 and a quarter (1.¼) cup flour
  2. 2 tsp sugar
  3. 1/8 tsp salt
  4. 1/2 cup diced cold butter (almost 1 stick)
  5. 1 large egg, lightly beaten
  6. All purpose Flour, for rolling the dough

* Filling

For Filling:-
  1. 5 tbsp plain melted butter
  2. 1 cup packed light brown sugar
  3. 3/4 cup corn syrup, light & dark each
  4. 1/2 tsp fine salt
  5. 2 cups toasted pecans, chopped
  6. 1-2 tbsp bourbon
  7. 2 tsp pure vanilla extract
  8. 3 eggs, lightly beaten

* Directions:-

Step 1:- Prepare dough by hand:- In a bowl, mix thoroughly the sugar, flour and salt. With the fingers work the butter into the dry ingredients until it looks like yellow cornmeal blended with bean-sized bits of butter. (In case if flour-butter mixture gets warm, refrigerate it for some time before proceeding.) Stir the dough together by adding the egg now either with the fork or by hands. If the dough is dry and hard enough, shower a very little cold water over the mixture.

Step 2:- Alternatively, prepare dough in a food processor. Pulse the sugar, flour and salt until uniform mixture is formed. Add butter till it gains light yellowish texture. Now add the eggs and and pulse it 1 to 2 times. Mixture should be uniform, don't let the dough take a shape of bowl. Add a tsp of cold water if dough is too dry.

Step 3:- Collect dough into a disk, wrap in plastic paper and refrigerate till it's completely chilled, minimum 1 hour.
With a baking sheet on middle rack, preheat oven to 350°F.

Step 4:- On a lightly floured surface roll out the dough with a little floured rolling pin into a 12-inch round and fit into a 9-inch pie plate. Trim edge, leaving a half inch overhang. Fold overhang under and gently press against the rim of pie plate, then crimp decoratively. Lightly pierce bottom all over with a fork. Chill until firm, minimum 30 minutes (or freeze 10 minutes).

Step 5:- Meanwhile, melt butter over medium heat in a small saucepan. Add brown sugar and whisk it until it gets smooth. Off the burner and blend in vanilla, corn syrup, salt and zest. Lightly beat eggs in a bowl, then add corn syrup mixture and blend thoroughly.

Step 6:- Put pecans in pie plate and spread an even layer of corn syrup mixture over them. Bake on hot baking sheet until edges are set, 50 minutes to 1 hour.(If it seems edges are getting too dark cover them halfway during baking with the aluminum foil.) Cool completely.
