  1. 4 lbs (12 medium) russet potatoes
  2. 1¼ cups hot milk
  3. 2 sticks (226 grams) unsalted butter
  4. 1½ tsp sea salt, or as you wish
  5. 1 Tbsp fresh parsley or chives, finely chopped for garnish (optional)
  6. * How to Cook

    1. Choose the best and medium sized potatoes that should be reddish brown in color.
    2. Wash them very well. Make sure that any particle is not left on any piece.
    3. Now peel the potatoes. If they are large in size then you cut them in two pieces then peel.
    4. After the peeling the potatoes, take a big pot and fill it cold water.
    5. Place the potatoes in that big pot. Make sure that potatoes are completely sunk in the water.
    6. Now boil the potatoes for 20-25 mins. During that time check by piercing knife into them that they are boiled or not. Boil until you do not get easily pierced with the knife.
    7. After the boiling potatoes, take them into another pot. Make sure that water is drained well from the potatoes.
    8. Now transfer the boiled potatoes into bowl of stand mixer.
    9. Initially, you should break the potatoes by hand lightly then run the mixer on the low speed for 30 seconds. After that slowly slowly increase the speed of mixer. Then start to pour hot milk in the mixer. The quantity of hot milk should not be more than written above.
    10. After adding hot milk, add the butter. Make sure one stick at a time. After adding it, potatoes will become whipped and fluffy. Then finally add one and half tsp salt or according to your taste. It is notable that the mixer should be on during whole this time and should run on slow or medium speed.
